Vegan Pineapple Upside Down Cake Redux

A slightly different take on a simple vegan upside down cake. I usually use some chia seeds as a binder for my vegan baking adventures, or flax seeds if you can't find chia. Sometimes I add a few drops of warm water to the chia to let them hydrate, they're an amazing egg substitute! The coconut oil and extra citrus give this cake a great tropical taste..yum! Sprinkle some turbinado sugar on the fruit if it's not ripe enough. Please make sure to mix up the spices or leave some out to your preference. This is a handy recipe for making rice sheets and noodles, especially the ones that are not readily available, such as the wide rice noodles. The recipe is easy, but I suggest that you watch a video at such as, www.ifoodtv/video/making rice noodles. One video is worth a thousand words. This recipe comes from one of my most treasured books: "Asian Pasta" by Linda Burum, 1985. Linda claims that she can make a batch of rice noodles in much less time than it takes to go to the store, and that the homemade noodles are far superior. Cream of Shallot Soup

From thekitchen.com which explains: 'Not only is this soup delicious, but, like most of our favorite soups, it's also ridiculously easy to prepare. The key is being careful with the few steps required. Make sure only to soften the shallots in the butter. You don't want to brown them at all. Browning would completely alter the taste of the soup. And when you add the cream and egg, be very careful to control the heat and prevent the soup from boiling. You want to warm the mixture through and thicken it slightly, not accidentally create a custard base. Your reward for these minor efforts will be more than worth the trouble.' Mediterranean Veggie Sandwich

This could be a copy cat recipe for Panera Bread's Mediterranean Veggie Sandwich, however, this is a little lower in calories and fat with the few changes I've done. Hungry Girl Complete & Utter Oatmeal Insanity

I got this recipe entirely from Hungrygirl.com. It's chock full of fiber and is crazy healthy and volumetric. Dieters will not have to worry about feeling hungry with this breakfast of champions. Super Healthy No Oil Granola!!

This recipe is from my sister-in-law and I've always loved it. Just finally made it for the first time today. I plan to vary the ingredients a bit next time (probably adding more dried fruit, etc.) and definitely want to add cinnamon. I also did not have stevia today, so used powdered sugar and it came out fine (though you have to use more since stevia is much sweeter than regular sugar). Chocolate Chip Scones

It is very important that you mix the dough/batter very gently until just combined and bake them immediately otherwise the scones will get tough. The amount of salt may be reduced if you wish. You can very easily substitute the nuts/chocolate with dried fruits/whatever and the vanilla extract with other flavorings (but make sure to reduce to 1 tsp).
